1kg beef mince
1 white onion, chopped
4 cloves garlic, chopped
1½ tsps dried basil and oregano
3 tblspns fresh parsley and basil, chopped
½ cup grated pecorino
Salt and pepper
Pasta Sauce Ingredients:
1 small onion, finely chopped
2 cloves garlic
3 tblsp extra virgin olive oil
1 kg tomatoes, chopped (remove the core & deseed)
1 cup basil leaves, chopped
1 tsp dried oregano
Salt & pepper, to season
+ extra ½ cup pecorino to finish the dish
Mancini pasta of your choice
Sauté the onion & garlic in olive oil until soft, add the tomatoes & herbs. Cook on a low heat for 1 hour, stirring occasionally. Season the sauce to your liking.
Mix all ingredients thoroughly together. With damp hands roll the mixture into small balls.
Finishing the dish:
Place a large ladleful of sauce into the bottom of a deep baking dish. Arrange meatballs in a single layer then top with the rest of the sauce. Cover with foil and bake at 180° for 40 minutes. Remove foil and sprinkle over extra pecorino. Place back in the oven for 15 minutes then serve with pasta.
