Ingredients:
1 kg boneless groper cut into bite size pieces
2 large brown onions diced
1 can coconut milk
½ jar Goan Cuisine Xec Xec Curry Paste
1 bunch fresh coriander chopped stems & leaves
4 fresh red or green chillies de-seeded halved
50ml canola oil
300 ml water
Salt to taste
Method:
Wash fish fillets, drain and cut into bite size pieces and set aside. Heat oil in broad heavy based pot and fry onions until well browned adding chopped coriander stems midway. Add ½ jar Goan Cuisine Xec Xec Curry Paste and stir well, cooking on medium heat until oil begins to come away from mixture. Add water and stir through reducing heat to low. While on low add coconut milk, de-seeded chillies plus coriander leaves and bring up to heat gently. Once simmering add fish pieces and cook for a further 4-5 minutes until fish is cooked through. Season with salt to taste. Serve with steamed basmati rice or chapattis.
