Ingredients:
1.5 kg Mt Barker chicken drumsticks
2 tblspns olive oil
Salt & pepper
2 onions, sliced
1 Pkt Adam & Eva Frozen Mango Cheeks
1 teaspoon Whittington’s Bush Lemon Myrtle Curry Powder
1x 400ml Can Ayam Coconut Milk
Method:
Toss the drumsticks with the oil, salt and pepper. Place into a baking dish and scatter over the onion and mango cheeks. Mix bush lemon myrtle curry powder with the coconut milk. Pour over drumsticks. Cover with foil and place into a 180° oven for 1 hour then remove the foil and place back into the oven for 15 minutes to brown. Serve with Jasmine Rice.
