1 tray of Drovers chicken enchiladas
Sour cream, guacamole and salad to serve
Place the enchiladas in a baking paper lined oven tray. Cover with foil and place in a 180° oven for 20 minutes. Remove the foil and bake the enchiladas until the tops are browned (approx 10 minutes). Serve with your favourite Mexican accompaniments – we suggest sour cream, guacamole and salad.
1 large avocado
½ – 1 tblspn of lemon or lime juice
Pinch of salt
Fresh coriander chopped (optional)
Fresh chilli or chilli sauce to taste (optional)
Mash the avocado and stir through remaining ingredients.
