4 scotch fillet steaks at room temperature
Splash of olive oil
Salt and cracked pepper
80 to 100 grams of your favourite blue cheese *
Add the oil to a frypan and when its hot carefully add the seasoned steaks. Cook the steaks to your liking (3 minutes each side for rarer and 5 each side for more well done).
Remove to rest on a warm plate. Slice the cheese finely and lay atop the warm steak. It will melt and infuse the meat with it’s delicious flavours. Serve the steak on a sweet potato mash and a light coleslaw salad.
*For a milder cheese flavour, choose a creamy camembert or brie.
