Ingredients:
2 mangoes sliced into bite-sized pieces
2 burpless cucumbers slice longways into quarters, de-seeded and chopped.
2 punnets grape tomatoes halved
2 handfuls of baby spinach
½ cup chopped macadamia nuts
Dressing:
¼ cup light olive oil
¼ cup sweet chilli sauce
Juice of 1 lime
*2 tablespoons fresh coriander chopped (*optional)
Blend together
Preparation Method:
Mix all ingredients together and toss with the dressing at the last minute. Sprinkle with the chopped nuts and serve.
Serves: 4
