GARLIC BUTTER CHICKEN KIEV - Recipe by @happywhenfit

Serves 6 (GF)
ㅤ
INGREDIENTS
1kg Chicken mince
1 tbsp garlic powder
1/2 tbsp onion powder
1/2 tsp of each salt & pepper
ㅤ
GARLIC BUTTER
125g Salted Butter
4 cloves garlic crushed
3 tbsp Fresh parsley finely chopped
ㅤ
THE COATING
BOWL 1: Cassava or tapioca flour
BOWL 2: 2 eggs whisked
BOWL 3:
1 cup Almond flour
1/4 cup Parmesan cheese
2 tbsp Psyllium Husk
1 tbsp Mixed herbs
1/2 tsp salt

METHOD
I. Preheat oven to 180C & line a baking tray with baking paper. Add all the garlic butter ingredients to a small bowl & use a fork to mash together. Roll into a thick sausage shape & cover in gladwrap before placing into the freezer to set for 15 minutes.
2. While the butter sets mix the spices into your chicken mince in a mixing bowl & prepare 3 small bowls for coating your Kievs with the ‘Coating’ ingredients.
3. Remove the garlic butter from the freezer & cut into small pieces to place into the middle of each Kiev.
4. Line your bench with baking paper & add a little cassava flour for extra non stick. Add a good amount of olive oil to a large non stick pan on med heat. Allow the pan to heat fully so the oil is nice & hot while you prepare the Kievs.
5. Take a handful of mince & roll into a ball. Place onto the baking paper & press into a circle. Add a piece of the garlic butter to the middle & fold over into a half circle to cover the garlic butter. Gently remove from the baking paper & use your hands to form Kiev shape. Roll in the cassava flour, coat on the egg mix & finally coat in the almond flour mix before adding to the hot pan. Rpt until all mince is used.
6. Cook Kievs until lightly golden on each side (approx 4 mins) before transferring to your lined baking tray & into the oven for 20-25 mins. Serve with sweet potato chips & steamed veggies😋
